How the baking pan size converter calculation works

Pans are interchangeable when they hold a similar volume of batter at a similar depth. What matters is not the label on the pan but its surface area, because that is what sets how deep the batter lies and therefore how long heat takes to reach the middle.

A 9×13 inch pan has 117 square inches of floor. Two 9 inch rounds have about 127 between them, which is why that swap is the classic one. A single 9 inch round has only 64 square inches, barely over half the 9×13, so pouring a sheet cake batter into one gives you batter nearly twice as deep — a cake that browns hard at the edges while the centre stays wet.

The time adjustment here scales with depth raised to the power of three quarters rather than with depth directly. Pure conduction into a slab would scale closer to the square of the thickness, but a cake pan is also heated from the sides and the batter sets progressively, so the real relationship sits between the two. It is an estimate, and the skewer is still the authority.

Frequently asked questions

Can I use a 9x13 pan instead of two 9-inch rounds?

Yes, that is one of the safest substitutions in baking. Two 9 inch rounds total about 127 square inches against the 117 of a 9×13, so the batter sits slightly deeper in the rectangular pan and usually needs five to ten minutes longer. The reverse works equally well.

How full should I fill a cake pan?

No more than about two thirds, and half is safer for batters with a lot of chemical leavening. Cake needs room to rise, and batter that crests the rim sets into a dome that collapses or spills. If this calculator reports much above 70% full, bake the excess separately as cupcakes rather than risking it.

Do I change the oven temperature when I change pans?

Only when the depth changes significantly. Batter more than about a quarter deeper than intended benefits from dropping the oven 25°F and baking longer, so the centre sets before the crust overbakes. Shallower batter can stay at the original temperature but will be done sooner.

Does glass or dark metal change things?

Yes. Glass and dark metal absorb and hold more heat than shiny aluminium, so edges brown faster. The usual advice is to lower the oven 25°F for glass or dark non-stick pans. That is independent of the size conversion here and stacks with it.
